With 4 leftover tortillas chilling in the freezer I decided it was time for Taco Night Part 2. But to spice things up a bit I decided to do a twist on potato tacos.

For the fried potatoes chop 2 cloves of garlic and approximately 1/4 cup of onions into a oiled pan over medium heat. Once they are soft and tender add 1/4 cup of chopped red bell pepper and cook for another minute. Then add 1/2 cup peeled and chopped potato, a sprinkling of salt and pepper, and then cover and cook for 10 minutes. Then remove the lid and stir occasionally for about another 5 minutes until brown and put to the side.
To make the lemony sour cream take a dollop of sour cream and squeeze lemon juice to taste. (I like lemon so I used approximately half a lemon). Then add a dash of salt and let sit.
Finally take the tortillas and reheat them in a pan briefly to warm them up and make them pliable. Take the warm tortilla add a scoop of our potato mixture and a dollop of the lemony sour cream and enjoy!
Recipe: Potato Tacos
For the potatoes:
2 cloves crushed garlic
1/4 cup chopped onions
1/4 cup chopped red bell peppers
1/2 cup chopped potatoes
For the lemon sour cream:
Dollop of sour cream
lemon juice (to taste)
a pinch of salt
