Taco Night Part 3: Toasted tortillas and cheese

So you’re probably thinking “how is this recipe worthy of a post” and that’s a valid first impression, but hold all judgement until you try for yourself these oven toasted tortillas topped with cheddar cheese and melted to a goeey deliciousness. This is a recipe my mom used to make for us on the weekends when we’d had a big breakfast and lunch and just wanted something small and easy for dinner. This would also be perfect for a snack.

So here’s what to do: take your tortilla and lightly brush it with vegetable or olive oil to help toast it to a light brown color. Then place in an oven preheated to 400 degrees until it is a golden brown color with small darker brown ‘spots’ (for me this took about 5-7 minutes as I was only making one).

When it’s that nice brown color pull it out and top with a hefty helping of shredded cheese. I used cheddar but other Mexican cheeses would work well too.

Then place it back into the oven until the cheese is bubbly.

Serve immediately with sour cream, guacamole, and salsa, and enjoy!
