Sunday mornings are the perfect time for pancakes, and with bananas going bad on the counter I decided to try Once Upon a Chef’s Banana Pancakes. (For recipe: http://www.onceuponachef.com/2013/01/banana-pancakes.html)
To make three pancakes (I mean you can’t just eat one) I began by whisking together 3/8 cup of flour, 1tsp granulated sugar, a heaping 1/4 tsp of baking powder, and 1/8 tsp of salt in a small bowl.
In another small bowl I mixed 1 egg, 1/2 ripe banana, 1/8 tsp vanilla and 1/4 cup of milk, making sure to mash the banana.
Incorporate the wet ingredients into the dry folding until it forms a batter. If the batter seems too thin add in a tiny bit of flour until you have the desired consistency.
Melt 1 tbsp of butter in a large pan over medium and scoop out batter into desired pancake size. Then when there are bubbles forming on the top flip and cook for another 1-2 minutes. Immediately upon taking them off the stove put a slice of butter on each. Serve immediately and top with extra banana slices, syrup, or a light dusting of powdered sugar.
Judgement: these were incredibly simple to make but delicious, and the banana flavor isn’t overwhelming. I’d definitely make these again-and a perfect use for overripe bananas
