Cheesy Wedge Fries

One of the misconceptions about vegetarians is that we are also health nuts, but personally I love butter, cheese, and chocolate as much as the next person-if not more! So after a long week of work something with cheese and butter sounded like a delicious cap on the week. So I figured why not make my own homemade cheesy fries enough to serve two as side dishes or one if you’re feeling decadent!

Begin by turning the oven on to 450 and scrubbing one potato and slicing into even sized wedges. From there mix 1/2tbs of melted butter with a large pinch of salt and pepper (approximately 1/2tsp). Coat the potatoes in the mixture and lay in a pan making sure the potatoes aren’t covering one another.

Top with 2 cloves of chopped/pressed garlic and put in the oven for 10 minutes.

During this time grate 1/2 cup of cheddar cheese, and chop a scallion.

After 10 minutes take the pan out of the oven and flip each potato. Then return to the oven for another 10-15 minutes, or until the potatoes are cooked all the way through and lightly browned.

Then top with the shredded cheese and return to the oven for another 1-3 minutes.

Remove and put on a plate before topping with a large dollop of sour cream and chopped scallion. (I didn’t have any on hand so I went without)

1 potato scrubbed and wedged

1/2 cup grated cheddar cheese
1 chopped scallion
Sour cream
