Tonight I was in the mood for some creamy pasta but didn’t want just another basic sauce so I decided to try my next Pinterest experiment: Lauren’s Latest Browned Butter Alfredo Pasta (for the recipe go to http://www.laurenslatest.com/browned-butter-alfredo-pasta/ )
The recipe seemed deceptively simple, but the result was amazing!
To make it for one serving I cooked approximately 1/4lb of fettuccine in boiling water for 12 minutes.
Then I added 2tbsp of salted butter to a sauce pan over medium heat swirling once brown bits began to appear. Then I turned the stove top to low and added 1/4c half and half (instead of heavy cream), and 1/3c of finely grated parmesan. I added a healthy sprinkling of pepper and set it to the side. (Note: Lauren is correct that the pan will sizzle when you add the half and half but just stir and it will subside)
Then once pasta is cooked and strained toss the pasta into the sauce pan and mix to coat the pasta. Serve immediately with an extra sprinkling of grated parmesan. Chopped parsley would also be a good choice for some color.
Judgement: a delicious stand out sauce- no one will believe how simple it was!
